Harvesting in the cool of the night, we crush at sunrise and leave the grapes for 6-10 hours in the press to extract the right amount of colour. Only the ‘Free Run’ juice is used ensuring a brightly coloured, aromatic and fruity style of wine. The juice is then clarified and fermented cold until the right sweetness is achieved at which time the wine is chilled to near frozen to arrest the fermentation capturing the natural fruit flavour and sweetness.\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan data-mce-fragment=\"1\"\u003e\u003cstrong data-mce-fragment=\"1\"\u003eTASTING NOTES\u003cbr\u003e\u003c\/strong\u003e\u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003e\u003c\/span\u003eVibrant crimson in colour.
