Sauvignon Blanc 2021
At Woodstock we believe the Adelaide Hills is one of the best spots in the world to grow Sauvignon Blanc. The cooler weather ensures great acids alongside the famous aromas that make Sauvignon Blanc such a popular variety around the world. The fruit for this wine comes off of one our great friends vineyards in the Northern Adelaide Hills, a stones throw from Eden Valley.
Cold night-time temperatures were a prominent feature of harvest 2021, causing elevated natural acidity to occur in the vineyard. Warm sunny days (scarcely above 35C) created ideal conditions for flavour development and even ripening. The Sauvignon Blanc fruit was harvested at peak flavour ripeness then processed and fermented cold to ensure the retention of delicate fruit aromas. After fermentation, sulphur was added to restrict malolactic fermentation before cold stabilisation, earth filtration and bottling.
This fresh, aromatic style of Sauvignon Blanc shows both tropical and herbaceous characters. Clean and crisp on the palate, this wine is fruit forward and easy drinking. A textbook refreshing style for early appreciation. Always serve chilled.
