Sauvignon Blanc
We believe the Adelaide Hills is one of the best spots in the world to grow Sauvignon Blanc - the fruit for this wine is sourced from the high elevations just outside Kangarilla. The elevated position of the vineyard produces great acidity alongside intense aromatic elements. This fresh style exhibits both tropical and herbaceous characters, with a fruit forward palate for easy drinking.
Winemaking
Cold night-time temperatures are often a prominent feature of harvest in this region, causing elevated natural acidity to occur in the vineyard. Warm sunny days create ideal conditions for flavour development and even ripening. The Sauvignon Blanc fruit is harvested at peak flavour ripeness then processed and fermented cold to ensure the retention of delicate fruit aromas. After fermentation, we restrict malolactic fermentation before cold stabilisation, earth filtration and bottling.
The Wine
This fresh, aromatic style of Sauvignon Blanc shows both tropical and herbaceous characters. Clean and crisp on the palate, this wine is fruit forward and easy drinking. A textbook refreshing style for early appreciation. Always serve chilled.
