Winter rains refresh the vineyards and flow down Creeks to the Coasts. Spring starts the vine shoots growing, then their flowers set to become berries. Bright South Australian summer sun ripens grapes under clear blue skies. Harvest and winemaking comes in Autumn before pruning and the cycle starts again.

The pristine Coasts and clean Creeks of Langhorne Creek & McLaren Vale are an important part of our sustainable winemaking.  

Winemaking
Botrytis Cinerea, a pink furry mould, is responsible for this delicious drink. The mould pierces the skins then feeds on the juice of the berries, causing them to shrivel and concentrate. Mild and humid conditions are favourable for its onset and usually occurs at the end of the growing season. A somewhat messy winemaking process, but the resulting wine is a beauty from the beast!

The Wine
French style sweet dessert wine. Beautifully balanced sweetness with a zest of acidity. Peaches, apricots, lemon citrus, bitter almond and honey with warming undertone of ginger. 

Serving Suggestion
Serve chilled with a cheese plate or a creamy, decadent dessert lime Crème Brulee or profiteroles.
